Mushroom logs
Each log is approximately 500mm long and 100mm in diameter and is sourced from managed forests in the Highlands of Scotland. They are best treated as shade-loving plants and kept well watered.

They can be buried to a third of their length in a shady spot and will fruit according to seasonal changes.

Shi-itake can also be laid out in shady conditions and shocked to induce fruiting. Once mature they will fruit for up to three years.

Inoculate your own logs using dowel spawn

Freshly cut hardwood logs or stumps can be inoculated with dowel spawn to grow a variety of fungi. Timber should be disease-free and cut in the dormant season. Most hardwoods are suitable (except when growing Indian Oyster, which requires softwood), although oak, beech and birch (which are used by commercial growers) will give the most reliable results.

Dowel spawn consists of sterile wooden dowels colonised with vigorous mushroom mycelium. 9mm holes are drilled into the logs or stumps and the dowels are tapped in with a hammer. The surface must then be sealed with wax to reduce moisture loss. Allow 50 dowels for a 1m x 10cm log or for a stump.

Dowel kits include wax and a daubing tool and are priced at £13.50 for a 100-dowel kit and £46.50 for a 1,000-dowel kit.

Shi-itake (Lentinus edodes)
Popular and widely cultivated oriental mushroom with domed cap and fibrous stem. Has a strong smokey flavour and is best suited to slow cooking. It dries well. 
   
Grey oyster (Pleurotus ostreatus)
Easily cultivated and well recognised fungi, forming clusters of caps from its growth point. Though not strong in flavour, it is versatile enough to be used in most mushroom dishes. 
   
Chicken of the woods (Laetiporus sulphureus)
Distinctive yellow shelf-like lobes that are best eaten young. Has the taste and texture of chicken breast - some enthusiasts even claim that it is superior. 
   
Lion's mane (Hericinium erinaceous)
A strange but beautiful mushroom consisting of waterfalls of icicle-like spines. Has a mild, sweet flavour which, when grilled and served with melted butter, reportedly tastes like lobster!

Toilet roll kits
Delicious edible mushrooms can be easily grown by pouring the spawn into the centre of a roll of toilet paper! Will fruit in about six weeks and should provide three or four crops. The complete kit includes 100g of spawn (enough for two toilet rolls) and full instructions. A fascinating introduction to mushroom growing that is especially fun for children.

Mushroom patches
Mushrooms are wonderful recyclers - they break down nutrients and enrich your garden soil. They also look beautiful and are good to eat. The following varieties are supplied as grain spawn (with the mycelium growing on organic wheat grain) to plant in your garden. They require warmth to become established and are supplied in spring for autumn fruiting, with the exception of field mushroom, which can be supplied throughout the year and used in compost beds.

Field mushroom (Agaricus campestris)
Sow in lawns, pastures or fields. Can fruit for several years. Easily recognised 'general purpose' mushroom.
 
Shaggy inkcap (Coprinus comatus)
To seed your cold compost heap, wood chip or straw mulched borders or shaded lawns. Delicate texture, best picked young and used immediately.
 
King stropharia (Stropharia rugoso-annulata)
This big, wine-coloured mushroom prefers straw or wood chip mulched borders or deep beds. Can withstand some sun but may require watering. Highly rated by many mycophagists.
 
Wood blewit (Lepista nuda)
Splendid colouration, it does best under border shrubbery and in groups of conifers which have a thick humus layer underneath. Dense flesh with a long shelf life and mild flavour.
 
Parasol mushroom (Lepiota procera)
Fruits in early autumn amongst grass at the edge of woods and clearings. Has a dry texture and an excellent flavour - best eaten young.
